Feature Recipe: Maple BBQ Turkey

- 12 - 14 lb Turkey or large roasting chicken
- 1 ½ cups Everything Maple BBQ sauce (or Yikes! for more heat)
- 1 cup of water
Method: Make a pocket between the skin and the flesh of the bird, by sliding your hand between the layers –the deeper the pockets, the better… as always! Fill the pockets with our Maple BBQ sauce.
Cook on a vertical roaster - if possible - but an empty soda can will work as well (just fill with water first) Pour the water in the bottom of the drip pan, and barbeque on the grill on low for 15 minutes per pound of meat. OR cook in the oven at 325° F.
Mix the remaining sauce with the pan drippings, skimming off any unwanted fat. Allow the turkey to ‘rest’ for 15 minutes and then carve the meat and place it back into the dripping pan. Allow the meat to warm thoroughly and serve.
Pair this dish perfectly with Canadian Style Roasted Veggies for a wholesome family meal!

- 1 cup ‘Add a Little Love’ Maple Roasted Garlic & Parmesan Dressing
- 1 cup each of your favourite veggies (6-8cups in total) – we suggest sliced carrots, zucchini, mushrooms, sweet onions, peppers, parsnips, turnips and sweet potatoes.
Method: Toss veggies together with dressing, ensuring they are nicely coated. Roast in the oven, or on the grill at 350° F, for 40 minutes.
The savoury caramelized glaze will make your mouth sing!

Maple Balsamic

Our full flavoured Maple Balsamic Reduction is wonderful on salads, especially Greek salads. It’s wonderful as a marinade on your favourite meat or fish. Maple Berries Vinaigrette
A delightful combination of fresh raspberry, blackberry and blueberry bits swimming in a tangy mix of poppy seeds, cracked pepper, lemon, and pure maple syrup for a simply exquisite product.
This vinaigrette is always a hit as a dressing on spinach, any meal salad or even on a fruit salad. It is elegant when generously poured over chicken breasts stuffed with spinach and brie topped with sweet onions. And it also makes a great appetizer when drizzled over cream cheese served with crackers.

Maple Citrus Twist
The zing of mangos, lemons, orange, and grapefruit added to pure maple syrup give this product a light, fresh sweet and sour taste.
It adds an excellent twist as a marinade on chicken or any seafood, but it also shines on salads or in slaws as a fat-free dressing. Always a true Canadian favourite dish when used a glaze with some fresh dill on a cedar planked salmon.
1. Try this one in your next slaw. Mix broccoli slaw, with shredded cabbage, green onions, sliced strawberries, fresh pineapple chunks and dried cranberries. Add 1c Citrus Twist and 1/2c mayo
2. Salmon sings when coated in this sauce...try it on all of your favourite seafood.
3. Chicken pieces glazed with Citrus Twist come out with a wonderful flavour, and fully carmelized.
4. Tropical salad also sings a funky new song when started with Citrus Twist. Mix 1c each fresh pineapple chunks, coconut, mini marshmallows, mango or papaya pieces , sour cream and the Citrus Twist with 1/4c halved marachino cherries . Toss and serve.
5. Chop several seeded ripe tomatoes, 1 sweet onion, 1 sm red pepper and parsley very finely. Add 1/4c Citrus Twist, 1 tsp hot sauce, 1 tsp chili powder, and a dash of ceyenne, and you have a great salsa.
6. Citrus Twist adds freshness to steamed asparagus, or green beans too.

Maple Roasted Garlic & Parmesan
Nicknamed ‘Add a Little Love’, this savoury product is a marriage made in heaven of inspired ingredients.
Ideal when served as a dressing, vegetable or meat marinade. Marinate chunks of your favourite meat and veggies with it to create your own ‘Love me Tender’ kabobs. It’s also amazing on any pasta - served hot or cold!
1. Amazing on pasta; hot or cold! Start with cooked pasta, add your favourite veggies-peppers, onions, mushrooms, tomatoes, throw in some sliced pepperoni, bacon or ham, toss in 1/2c of Add a Little Love, and a sprinkle of Parmesan, and you have a meal.

Maple & Roasted Garlic Dip Mix
This funky product was initially intended to have its savoury contents blended with cream cheese to create an incredible dip to serve with veggies, fruit, or even to spread on a bagel.
Now, the ideas seem never-ending for this product! It’s become an amazing marinade - especially on game meat such as deer, moose, elk and duck for a truly Canadian inspired meal. When mixed equally with your favourite vinegar, it becomes a light salad dressing. Mixed with equal amounts of your favourite mustard, it becomes a glaze for ham, pork or back bacon.
1. Mix 125 ml of dip mix with 8 oz of cream cheese in a food processor. Mix and serve with crackers, veggies or fruit.
2. Makes an amazing marinade, especially on game meat such as deer, moose, elk and duck

4. Mix equal amounts of Maple Roasted Garlic Dip Mix with your favourite mustard, to glaze ham, pork or back bacon.
